NEW: Two Chefs Cookery Classes - Book Now

Learn new recipes and perfect your cooking skills with our award-winning chefs

Whether you’re a foodie looking to expand your repertoire or are a newbie in the kitchen and keen to learn some new skills and dishes, our highly experienced chefs, Ben Kingdon and Gavin Castle, will walk you through some easy steps to build your confidence in the kitchen.

Classes will take place on selected days throughout 2021 and are limited to just three people per class.

Vouchers are available now for just £75 per person, with a choice of one of three carefully crafted cookery days to choose from:

Course A – Fish and Seafood Day

You will have the opportunity to make all of these delicious recipes:

  • Classic moules mariniere.
  • Pan fried mackerel, beetroot, horseradish crème fraiche, cucumber salad.
  • Prawn and monkfish curry, coconut milk, coriander.
  • Grilled Brixham hake fillet, crushed new potatoes, baby vegetables, chorizo and white wine sauce.
  • Whole oven roasted Skate wing, parmentier potatoes, asparagus, caper chilli and dill butter.

During your day you will learn:

  • Key knife skills.
  • Fillet, pin boning and gutting fish.
  • How to prepare shellfish.
  • Different cooking methods.
  • Sauces.
  • Presentation and garnish skills.

Course B – Meat and Poultry Day

You will have the opportunity to make all of these delicious recipes:

  • Roasted chicken supreme, fondant potatoes, baby vegetables, crispy bacon, tarragon sauce.
  • Rump of Devon Lamb, pan roasted with garlic and rosemary, parmentier potatoes, peas, bacon, redcurrant jus.
  • Honey roasted Duck breast, sweet potatoes, creamed savoy cabbage, parsnip crisps, red wine sauce.
  • Chicken, chorizo, and mushroom pie, champ mash potato, baby leeks and asparagus.
  • Classic Rump steak, hand cut chips, wild mushrooms, grilled tomato, peppercorn sauce.

During your day you will learn:

  • To prepare a whole chicken ready to cook.
  • To prepare and trim cuts of meat.
  • To prepare and cook different potatoes and vegetables.
  • Knife skills and selection.
  • Sauces.
  • Presentation and garnish skills.

Course C – Baking Day

During your day you will learn how to bake:

  • Pastry
  • Bread
  • Sponge cake
  • Quiche
  • Brownies and biscuits
  • Scones

You will bake a selection of the following items:

  • Margherita pizza.
  • Blue cheese, pine nuts and basil quiche.
  • Sun blushed tomato focaccia bread.
  • Orange polenta and almond biscuits.
  • Traditional Victoria sponge.
  • Fruit, plain and cheese scones.
  • Profiteroles and eclairs.
  • Triple chocolate brownie.
  • Shortbread.

Cookery Classes at Newton Abbot Racecourse

Each cookery class will begin at 9.30am and conclude at 4.00pm. All you will need to bring is some comfortable shoes to wear in our kitchen.

We will provide you with:

  • All the ingredients.
  • Equipment.
  • Apron and head wear if necessary.
  • Refreshments and lunch.
  • The opportunity to take home all you make.

Courses take place on designated dates throughout the year – please ask for dates and availability when booking. Each course will take place at Newton Abbot Racecourse, where you’ll enjoy free on-site parking for the day.

Meet the Chefs

Ben Kingdon

Ben started his career as a Chef 18 years ago. After training at hotels in South Devon he became Head Chef at the Cary Arms in Torquay at the age of 24. Whilst there he won a number of awards including:

  • Poultry Chef of the Year
  • Gold in Taste of the West
  • AA Rosette

He joined Newton Abbot Racecourse in the Spring of 2019 and soon brought his passion and high-quality cuisine to the racecourse. Fish and seafood are his favourite things to cook.

Gavin Castle

Gavin is an Edinburgh-born chef who moved to Devon 10 years ago. His love of food started at an early age and continues. He was a finalist in the Devon Food and Drink Awards in 2016 and 2018 and has also won awards in Edinburgh for his pastry work. Gavin joined the racecourse in July 2019 working alongside Ben.

They make a great team with an immense sense of humour and produce delicious meals for our many raceday restaurants, conferences and events.
